Ingredients

  • 1/2 cup butter salted or unsalted
  • 1/4 cup red pepper green or other colors work too
  • 1/4 cup green onions may substitute other variety
  • 1 cup mushrooms
  • 3 Tbsp flour
  • 2 cups chicken broth 14.5 oz can works
  • 1/2 cup cream half-n-half or milk will work
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2½ cups turkey cooked, shredded or diced

Instructions

  1. In the bottom of a large skillet, melt the butter. Chop and add the red pepper, onion, and mushrooms. Sauté until al dente or 5 minutes on medium-high.
  2. Stir in flour. Continue stirring until smooth. Add the chicken stock.
  3. Slowly drizzle in the cream, and stir using a spatula until the mixture starts to thicken.
  4. Add the cooked turkey. Stir to combine. Add salt and pepper to taste.
  5. Serve immediately.
